Just if someone else every runs into this problem:
I use the latest version of Ubuntu and I had the problem that links wouldn't open in my browser when I clicked on them in Signal - didn't think too much about it because I thought it was a sandbox security thing. But then it happened with discord, too, so I had to investigate.
A few hours of research later, it turned out that I had two firefox profiles in /.local/share/applications
If you have the same problem start journalctl -f in a terminal, click on a link that won't open and then something like this should pop up:
Discord5692: Could not find the program '/usr/lib/firefox/firefox-bin'
go to .local/share/applications and search for any firefox-XXXX.desktop file, open them with a text editor and see if you find the link in there that journalctl gave you. That's the file you need to delete.
After that everything should work fine again.
Still don't know why it only started in Signal, but that works now again as well, so I am happy.
